Heat 1 Tablespoon of oil in a wok or heavy skillet and cook eggs until set. Transfer them to a cutting board and slice them into small strips.
Heat 3-4 more Tablespoons of oil in wok to medium high heat & stir-fry:
2-3 green onions chopped (including some green tops)
1 carrot chopped
1/2 green bell pepper & 1/2 red bell pepper chopped (1 cup frozen peas may be substituted)
3/4 to 1 cup bean sprouts (Optional--If available)
Reduce heat slightly and add:
1 cup Diced HoneyBaked Ham or Turkey Breast
1/4 pound sliced mushrooms
3 cups cold cooked rice
1 can diced sliced Water Chestnuts (Optional)
1 cup chopped greens (Kale, Spinach, Mustard, or mix of)
3/4 teaspoon ground corriander the reserved cooked eggs
4 tablespoons soy sauce
1 teasoon crushed red pepper (Optional)
1/4 cup fresh Cilantro--Chopped Continue to stir fry until heated through and serve, passing more soy sauce on the side.
